VINIFICATION & WINEMAKING - In 2023, Clare Valley's cooler vintage resulted in wines with vibrant fruit flavours, thanks to a leisurely ripening process. The gently sloping alluvial soils in the vineyard provide the ideal environment for producing a robust and fleshy Sangiovese, showcasing its varietal characters. This is small-batch production at its finest. The wine is fermented dry with seven days of extended skin contact post-fermentation and aged in old French and American oak barrels for three months. It is crafted to be youthful, meeting the criteria for a young Chianti.

NOSE- Delicately savoury aromas intertwine with notes of ripe black cherry and a touch of cracked black pepper. The bouquet boasts good fruit concentration.

PALATE- Floral notes dance alongside flavours of black rose petals and cherry spices, creating a delightful and nuanced palate. Supported by a medium fruit-driven body, the wine showcases good acidity and silky tannins that glide effortlessly.

FOOD MATCH - Lamb tagine, or veal saltimbocca.
